Erica from Central Valley New York recently mailed in this the best darn kettle corn recipe, and let me tell you, it is indeed one of the best darn recipes in our whole database. Be sure and give this one a try at least one time, it's well worth it. The cooking process is real simple. For step one, take out a large deep boiling pot. It is a must that you use a pot with a nonstick lining, otherwise you'll burn the sugar. Place your pot on to your stove top, then set your temperature gauge to medium high. Next pour into the pot the La Tourangelle organic canola oil, heating it until it starts to shimmer. Obviously feel free to use your own favorite brand of canola oil. While your oil is heating, take out a small sealable plastic container, and then toss together the apple pie spice, white granulated cane sugar, and granulated plain salt. Set this mixture aside once done. Once the oil is shimmering, stir in the Pop Secret jumbo popcorn kernels and Singing Dog brand vanilla extract. At this point you will want to place a lid on to your pot, and then shake the vessel until the popcorn starts popping. Wear oven mitts while shaking the pot, that way you don't burn your hands. Once one cup of popcorn has popped, you will then want to vigorously stir in the sugar, salt, and apple pie spice mixture. Stir it so that it evenly coats the bottom of the pot. It's ok if some popcorn flies out during this phase. Once you have stirred the sugar in really well, place the lid back on top of your pot, then energetically shake the pot until the popping slows to a rate of one pop every two seconds. Finally you will want to remove the pot from the stove altogether, while continuing to shake it for another two to three whole minutes. This is an important stage in the creation process, as the sugar will caramelize while the kettle corn cools. For the very last step, pour this delicious snack into your favorite serving bowl. I love to whip up a batch of this tasty kettle corn and eat it while it's still hot and gooey.
