I am very thankful that Lionel of Apache Junction Arizona had the free time to submit this low calorie kettle corn recipe to us. For those of us who are dieting or watching our diet, this recipe is perfect. To start the preparation process, you will first need to take out an electric air popper. If the machine has been in storage for a lengthy period of time, then do be sure to wipe it's inner components down with a damp towel. Moving forward, next place your Jolly Time brand popcorn kernels and the extra virgin olive oil into your popcorn tray. At this point you will want to stir the kernels around in the olive oil, as this will help them heat more quickly, as the oil is a heat conductor. Pop the popcorn into a large brown paper bag. Once all the popcorn is in your bag, sprinkle into it the no calorie Splenda and fine ground kosher salt. Next you will want to crease the opening of the bag closed, then vigorously shake the bag to evenly distribute the no calorie sugar and salt. Take the extra time necessary to make sure your bag is firmly closed, as you don't want it flying all over the kitchen during the shaking phase. Your low calorie kettle corn is now ready to serve. Pour it into your favorite glass popcorn bowl. We hope you enjoyed this snack.
