June from Detroit Michigan emailed me this America's best kettle corn recipe, and I must say that it was absolutely delicious. For step one, take out a food processor and plug it in. Next you will want to grind together the white cane sugar and kosher salt for roughly a minute and a half. Set your sugar and salt mixture aside in a small dish. Next take out a large cooking pot, and place it on the stove over medium high heat. You will then want to pour the safflower oil into the pot, and let it heat for a minute. Once your oil is scorching hot, pour the unpopped popcorn kernels into the oil. Once your kernels have heated for about half a minute, pour the pure corn syrup into the mixture, and then give it a few stirs. Moving along, next place a lid over the popcorn, and then shake it while the popcorn pops. Once the popcorn has begun to pop, and the bottom of the pot is full of popcorn, you will then want to pour in the sugar and salt mixture. Be quick when doing the last step, as you don't want the sugar to burn. Continuously shake the pot with it's lid on until the popping slows to one pop every two seconds. At that point you will want to remove the pot from the stove, and then pour the kettle corn into a serving bowl. Eat it while it's still warm.
